Banana Butternut Squash Soup

Ingredients
  1. 1 butternut squash
  2. 1 banana
  3. 4 cups low sodium or homemade chicken broth.
  4. 1/4 cup heavy cream
  5. Salt & pepper to taste
Instructions
  1. Preheat oven to 400 degrees.
  2. Cut squash in two lengthwise. Place on cookie sheet.
  3. Place on middle rack in oven for 30 mins.
  4. When removed from oven and cool enough to handle, remove the skin and discard.
  5. Using an upright blender in small batches, puree the squash and banana together with the broth.
  6. Transfer to a large pot and bring to a boil.
  7. Add heavy cream and seasonings.
  8. Garnish and serve.
